Ingredients 750gm butternut pumpkin Method Peel pumpkin and cut into small pieces. Place in large saucepan. Add onion, potato and chicken stock. Bring to boil. Reduce heat and simmer un-covered for 25 minutes (or until vegetables are very soft and tender). Push vegies and liquid through a sieve OR place in a blender. Return puree to boil (stirring). Reduce heat and simmer for 5 minutes. Take off stove. Add cream. |
