Pumpkin Soup Recipe
Butternut Pumpkin, Onions, Potatoes, Chicken Stock,
Cream, Salt, Pepper, Saucepan.
Ingredients
750gm butternut pumpkin
2 large onions (chopped)
375gm potatoes (peeled)
4 cups chicken stock
1¼ cups cream
salt and pepper
Method
Peel pumpkin and cut into small pieces. Place in large
saucepan. Add onion, potato and chicken stock. Bring to boil. Reduce heat
and simmer un-covered for 25 minutes (or until vegetables are very soft
and tender). Push vegies and liquid through a sieve OR place in a blender.
Return puree to boil (stirring). Reduce heat and simmer for 5 minutes.
Take off stove. Add cream.
