Potato
& Corn Chowder Recipe
Onion, Potatoes, Soy Drink, Corn Cobs, Parsley,
Olive Oil, Water, Nutmeg, Salt.
Ingredients (Serves 4)
1 medium onion, diced finely
3 potatoes, peeled & diced finely
2 cups Sanitarium So Good soy drink
2 cobs corn or 1 cup corn kernels
2 tablespoons parsley, chopped
1 tablespoon olive oil
1 cup water
Pinch nutmeg
¼ teaspoon salt
Method
In a large saucepan heat oil over moderate heat.
Saute onion for 3 minutes or until transluccent.
Add potato and water.
Cover and bring to the boil.
Using a sharp knife cut the corn kernels from the cobs,
add to saucepan with So Good, nutmeg, salt and parsley.
Reduce heat and simmer uncovered for 10 minutes or until potato is done
when tested and the chowder has thickened slightly.
