Cream of Spinach Soup Recipe
Spinach, Shallots, Flour, Chicken Stock, Milk, Cream, Nutmeg, Salt, Pepper.

Ingredients

9 frozen spinach portions
4 shallots, finely chopped
1½ tablespoons flour
2 cups chicken stock
1½ cups milk
½ cup cream
grated nutmeg
salt & pepper

Method

Cook spinach in a small amount of boiling salted water.
Drain, pressing well to remove moisture.
Melt butter in a saucepan, add shallots and saute until soft.
Stir in flour and cook for 2 minutes.
Gradually stir in stock.
Add spinach, bring to boil then simmer for 20 minutes.
Puree soup in blender, return to saucepan.
Add milk, salt, pepper and grated nutmeg.
Stir in cream and reheat gently.
Serve immediately with croutons.
