Choko
(Chayote) Soup with Rice Recipe
Bacon, Onion, Butter, Chicken Stock Cubes, Curry
Powder, Water, Chokos, Rice, Salt, Pepper, Parsley.
Ingredients (Serves about 6)
90gm bacon (finely chopped)
1 medium onion (finely chopped)
15gm butter
3 chicken stock cubes and 3 teaspoons curry powder
7 cups water
3 chokos (peeled and chopped)
4 tablespoons rice, a pinch of salt, pepper and parsley
Method
Heat butter in a saucepan. Fry bacon and onion for 2
minutes. Add chokos with rice. Fry another 2 minutes (stirring occasionally).
Add water, crumbled stock cubes, curry powder, salt and pepper (stirring
well). Cover and simmer for 30 minutes. Stir occasionally. Serve immediately
garnished with parsley.
