Asparagus
Soup Recipe
Asparagus Spears, Chicken Stock, Celery, Potatoes,
Lemon Juice.
Ingredients
16 fresh asparagus spears OR...
... 275gm can asparagus and liquid
3 cups chicken stock (or vegetable stock)
1 cup celery leaves (finely chopped)
3 large potatoes (Peeled and chopped)
1 tablespoon lemon juice
Method
If using fresh asparagus - boil for 4 minutes.
Drain (retain liquid).
Set aside 6 asparagus spears.
Combine remaining ingredients with ½ cup of retained liquid. Cook
for 1 hour. Puree in a blender until smooth. Reheat gently. Decorate with
remaining asparagus spears and serve.
