Recipe by Lorna Dawes Ingredients Tomatoes (thick slices) Method Place thick tomato slices on to a paper-lined oven tray on wire rack. Dribble olive oil over and sprinkle salt and pepper. Place in a pre-heated oven at 100ºC for 3-4 hours. When dried to your liking remove from oven, slide into an airtight container which has olive oil and garlic (enough to cover the tomatoes and any herb you may have). Refrigerate. Delicious served with salads OR in anti-pasto OR on toast. |
