Ginger Vegetable Gow Gees with Dipping Sauce Recipe
Cooking Oil spray, Red Pepper, Kumara, Bok Choy, Shallots, Ginger, Garlic, Bean Sprouts, Mint, Gow Gee Wrappers.

Ingredients

Cooking oil spray
1 small red pepper (chopped)
1 small kumara (grated)
1 small bok choy (finely chopped)
2 green shallots (finely chopped)
2 teaspoons fresh ginger (grated)
1 clove garlic (crushed)
1 cup bean sprouts (chopped)
1 tablespoon fresh mint (chopped)
40 gow gee wrappers

Dipping Sauce

Mix 1 tablespoon soy sauce (low salt), 2 teaspoons lime juice, 2 teaspoons sugar, ¼ teaspoon sambal oelek.

Method

Coat non stick pan with cooking oil spray. Add pepper, kumara, bok choy, shallots, ginger and garlic. Stir vegetables until just tender. Stir in sprouts and mint. Place a round teaspoon of mixture on centre of each wrapper and brush edges with water. Gather wrapper together in centre. Press firmly to seal. Place gow gees in a single layer steamer and cook covered over simmering water for about 20 minutes. Serve with dipping sauce. (Makes about 40).
