Salmon
& Asparagus Pasta
Leeks, Crushed Garlic, Asparagus, Yellow Capsicum,
Lemon Rind, Black Pepper, Vegetable Stock, Chopped Tomatoes, Salmon, Penne,
Parmesan Cheese.

Ingredients
Leels
Crushed Garlic
Asparagus (Chopped)
Yellow Capsicum (Diced)
Lemon Rind (Grated)
Black Pepper
Vegetable Stock
Chopped Tomatoes
Salmon
Penne or similar pasta
Parmesan Cheese
Method
Saute leeks and crushed garlic in a non stick frying pan until softened.
Add chopped asparagus, diced yellow capsicum, grated lemon rind, black
pepper and some vegetable stock. Cook until asparagus is just tender.
Stir in chopped tomatoes and a tin of salmon. Simmer gently until hot.
Combine asparagus mixture with hot pasta. Serve topped with grated parmesan
cheese.
