Lemon Prawns
Penne, Vegetable Oil, Broccoli Flowerettes, Garlic, Salt, Ginger, Lemon, Cream, Spring Onions, Fresh Basil, Yellow Capsicum, Medium Green Prawns. Large Serving Bowl.

Ingredients
375gm penne or small pasta
2 tablespoons vegetable oil
1½ cups small broccoli flowerettes
1 clove finely chopped garlic
1 pinch salt
¾ teaspoon ground ginger
Rind of 1 lemon
½ cup cream
2 spring onions including tops (thinly sliced)
2 teaspoons fresh basil - chopped OR ½ teaspoon dried
1 medium yellow or red capsicum (cut into strips)
500gm medium green prawns (shelled and de-veined)

Method
Cook pasta and drain well. Place in a large serving bowl and cover with foil to keep warm. In a frying pan that has a lid heat oil over a moderate heat for 1 minute. Add broccoli, capsicum, spring onions and basil. Cover and cook stirring occasionally for 8 minutes or until soft. Stir in prawns, lemon rind, garlic, salt and ginger. Cook uncovered for 4 minutes or just till prawns turn pink. Stir in cream and bring to the boil then cook uncovered for 2 minutes. Spoon over pasta or bed of rice. Serves 4.
