Gingered
Pork with Stir Fry Vegetables Recipe
Soy Sauce, Dry Red Wine, Golden Syrup, Brown Sugar,
Garlic, Fresh Ginger, Pork Fillets, Peanut Oil, Onion, Carrot, Zucchini,
Cornflour, Snow Peas, Bean sprouts.

Ingredients
¼ cup soy sauce (low salt)
2 tablespoons dry red wine
1 tablespoons golden syrup
1 tablespoon brown sugar
2 cloves garlic (crushed)
1 tablespoon fresh ginger (grated)
2 lean pork fillets
2 teaspoons peanut oil
1 medium onion (coarsely chopped)
1 small carrot (finely sliced)
1 medium zucchini (sliced)
2 teaspoons cornflour
1.15kg snow peas halved
1¼ cups bean sprouts
Method
Combine sauce, wine, golden syrup, sugar, garlic and ginger into a bowl.
Add pork. Mix well. Cover. Refrigerate for several hours or overnight,
turning occasionally. Drain pork, reserve marinade. Add pork to heated
non-stickpan. Cook until browned all over. Transfer pork to wire rack
in baking dish. Bake uncovered in moderate oven about 30 minutes or until
tender. Slice diagonally. Heat oil in wok or pan. Add onion, carrot and
zucchini. Stir-fry over heat until tender. Blend cornflour with reserved
marinade and enough water to make 1 cup of liquid. Add to wok with snow
peas and sprouts. Stir until sauce boils and thickens slightly. Serve
pork with stir-fried vegetables.
