Ingredients
¾ cup long grain rice
4 eggs and 50gm butter
1½ cups milk (warm)
½ cup shallots (sliced)
1 cup chopped spinach (cooked)
1 cup cheese (grated)
One third of a cup of grated parmesan cheese
Salt and pepper
Method
Cook rice. Allow to cool. Melt butter & cook shallots quickly. Beat
eggs in large bowl. Add rice, shallots, milk, spinach, cheeses, salt &
pepper. Pour into greased pie dish. Bake 190ºC for 40min or until
set. Serve with tossed salad & crusty bread. Serves 4-6.
