Peppered Chicken Recipe
Shallots, Mustard, Chicken Breast, Lemon, Peppercorns, Chives, Parsley. Marinade, Serving Dish, Garnish.

Ingredients
2 shallots, chopped
1 tablespoon mustard
4 chicken breasts, diced
1 lemon, juiced
1 tablespoon peppercorns
2 teaspoons chives, chopped
1 teaspoon parsley, chopped

Method
Make a marinade by mixing the shallots, mustard and lemon juice in a dish. Add the peppercorns after crushing them. Add the chicken and stir it in until it is coated. Leave it to marinade for 10 minutes. Heat the pan and place the marinated chicken in it. Stir fry for 5 minutes. Add the remaining marinade and cook for a further 5 minutes or until the chicken is browned and tender. Arrange the meat on a serving dish and garnish with chopped chives and parsley. Serves 4.
