Honey Sage Chicken with Fruity Seasoning Recipe
Chicken, Soy Sauce, Honey, Brown Rice, Wild Rice, Sultanas, Dried Apricots, Fresh Chives, Fresh Sage, Garlic, Egg.

Ingredients (Serves 6)
1.6kg chicken
1 tablespoon soy sauce (low salt)
1 tablespoon honey

Seasoning
½ cup brown rice and ¼ cup wild rice
¼ cup sultanas
¼ cup dried apricots (chopped)
¼ cup fresh chives and
1 tablespoon fresh sage (chopped)
1 clove garlic (crushed)
1 egg white (lightly beaten)

Sauce
1 teaspoon cornflour
¼ cup dry white wine
¾ cup chicken stock
1 teaspoon fresh sage (chopped)
2 teaspoons Worcestershire sauce

Method
Remove skin and fat from chicken. Fill chicken with fruity seasoning. Secure opening with skewers. Tie legs together. Tuck wings under. Place chicken on wire rack in baking dish. Brush evenly with some of the combined sauce and honey. Bake uncovered in moderate oven for abour 1½ hours OR until chicken is tender (brush with honey mixture during the first half of cooking). Cover legs and wings with foil during cooking if chicken is browning too quickly. Serve chicken with sage sauce.

Fruity Seasoning
Use two separate pans (For white rice and for brown rice). Add each rice to each large pan of boiling water and stir. Boil uncovered for 20 minutes OR until just tender. Drain. Combine rices and remaining ingredients. Mix well.

Sage Sauce
Combine blended cornflour and wine with remaining ingredients into pan. Stir until sauce boils and thickens.
