Fruit Cake Recipes
Mixed fruit, eggs, brown sugar, bi-carb soda, mixed spice, margarine, plain flour, self-raising flour, tined fruit, etc.

Boiled Fruit Cake

Ingredients

560gm mixed fruit
3 eggs
1½ cups brown sugar
1½ tablespoons bi-carb soda
1½ tablespoons mixed spice
185gm margarine
1½ cups plain flour
1½ cups self raising flour
1½ cups tinned fruit (drained) e.g. pineapple
1¼ cups juice from tinned fruit


Method

In a saucepan place margarine, mixed fruit, brown sugar, mixed spice, bi-carb soda, fruit and juice. Bring to boil and boil slowly for 5 minutes. Cool. Add beaten eggs and flour. Cook at 170ºC for approximately 1 to 1½ hours. When cooked leave in tin for 5 minutes before turning out onto cake rack.

Fruity Fruit Cake (from Lorna Dawes)

Ingredients

2 cups skim milk
1 cup sunflower seeds
1 packet fruit medley mix
12 dried apples (chopped)
1 cup macadamia nuts or walnuts or almonds
1 cup sugar
1¼ cups coconut
2 eggs
2 cups self raising flour.

Method

Place milk, sunflower seeds, fruits, nuts, sugar and coconut in a large bowl. Allow to soak ½ - 1 hour if possible. Preheat oven to 160ºC. Grease and line a deep square 23cm tin. Add eggs to fruit mix then self raising flour. Spoon mixture into tin and smooth top. Bake approx. 1 hour or until cooked when tested with a skewer.
